Because the big cam has a lot of valve overlap, and that bleeds off the cylinder pressure. You don't have enough pressure on the compression stroke to use the fuel octane right at the limit of detonation, so you have weaker pressure on the piston when it fires than you could have with more compression and the same octane fuel.
