I drove a 98 cobra, it was stock except x pipe and exhaust. I didn't like how it always sounded like you had your foot in its ass. They rev so freely and high, as well as thats were they make there power high in the rpm band. What I did like was shifting at 7000+rpm compared to my 2v 6000 rpm shifts. It spun the tires so hard from 1st to second. I definately know on a road course where you need to rev high those things have to be awesome. But with a stock gear, driving around in the city they can feel sluggish.

The torque is different between the 302 16V pushrod and the 280.8 dohc 32v v8's. One the engine obviously have more cubes which allows it to have more torque sooner. And the head and intake design is to make peek torque at a lower rpm than the 32v. So even with the 32v having a higher torque rating, it also comes at a higher rpm, so you don't feel the power as you would with the 302 as soon. 4:10 or even 4:30's have been know to give that car what it needs if you can get use to revving a v8 at cruising speeds which was hard for me going from a 5.0 to a 4.6.
