I have read that most tuners dissable the 02 sensor, if this is true how does the car adjust for lean/rich fuel for closed loop operation?

the tuner only disable the rear o2...the front ones still working...thats how you get all the reading for rich/lean:bigthumbsup

Not always. All of my 02 sensors are off. If this is the case then the car doesn't adjust for lean/rich mixture. You can adjust that in the tune yourself if your tuner trusts you ;)
Running in open loop is not the best way for most folks to run.

I agree and that's why most tuners don't leave those options open in the tune or at least they don't leave room for much adjustment. An accurate wideband is an absolute must.

You really have to know what you're doing to tune that way. :)

Or if you paid $600 for a dyno tune and tell your tuner to leave those options wide open :)
