Either can be done but not without some trouble. The 351w will bolt right in but many have had header clearance issues, however there are headers built for this purpose I think there are also hood clearance issues with high rise intakes. The 351/400 cleaveland/modified motors will also bolt in to the transmission/motor mounts with no problem but there are only one or two companies that make headers that fit properly and they'll co$t you $$$.

The easiest V8 to drop into these things is the 289/302 block. That's what they came with any they'll bolt in no problem, well some people have had issues with long tube headers but it's much easier.

If you're getting a screaming deal on a nice 351/400 then go for it but be ready to get some special headers. If you're looking for the easiest install, go for the 289 or 302.
just to let you know, the 351/400 is an extremely heavy, clunky, very low output truck motor. It's something you'd never want in your 65 mustang. I'd go with the 351w...you'll have a tight fit, but it'll work.
The windsor will fit easier and still use a small block trans the m used a big block trans and is a tiny bit bigger then the windsor.
