I changed the throttle body gasket and head gaskets on my 86 mustang gt 5.0 and now when first starts and is still cold it idles high until it warms up

How high does it idle? Higher idle during warm up is normal.

Is it speed density or mass air.? I had a 87 lx speed density that idled high, and it was a vacuum issue.
