I have a 66 Mustang V8 289, and I'm running a 4brl holley carburetor in it. About a week ago I took off the carburetor, and replaced all the gaskets and even the fuel transfer tube. it stopped leaking, but one of the issues didn't go away. When I accelerate, the car tries to shut off, but if I pump the pedal it'll stay on. It seems as if the car isn't getting enough gas. Any idea what the problem could be. Any ideas are appreciated. Thank you.

First logical thing to check is acceleraor pump. Just look down thru carb throat while moving linkage and see if it'spraying.
