Whenever I push my clutch in it makes like a whine/scraping kind of sound. I'd say grinding, but it's more of a 'scrape.' I've noticed it mainly in the cold weather, so I was thinking it may be just due to the cold weather?

Also, whenever I come to a stop & put my car in N or 1st (manual) the RPM's will drop to about 350-500 and it will shake as if I'm about to stall, whether or not the clutch is fully pushed in if I'm in 1st. It does this quite often. Then when I go to take off, it will shake as if I'm just learned how to drive stick. mechanic had told me my clutch is fine though & doesn't need replaced. So I was thinking maybe the cable needs tightened? If that's the case, how would I do that?

Earlier my 04 v6 was making some strange noises while operating the clutch. Noises and clutch operation changed with temperature. Last summer I changed the clutch. The clutch itself was fine except for some wear on the fingers. It turns out the throwout bearing was shot, and there was damage to the clutch fork, and fork ball joint as well. Operation of the clutch and transmission has been good this winter sense the repair.

As for the adjustment of the clutch. If you have a stock clutch quadrant, it can be adjusted by putting your foot under the clutch pedal and pulling it upward, then depress it fully, and there should be a click as it is adjusted.

For the idle issues, I've seen it posted to check the Idle Air Control valve, and also look for vacuum leaks. I'd start there.

I would suspect the cable at this point if you are sure it's not the clutch. If it is not fully disengaging while you are pushing in the pedal, it will shutter and make your rpm's drop. Also, shudder when taking off is usually a sign of hot spots on your flywheel caused by such.(Or symptoms of a new driver as you stated above)

I've read to do that but it just seemed to easy to be all that you have to do to adjust the clutch! :gringreen thank you for the advice, really appreciate it! i'll do that tomorrow morning & see how it goes from there.
