Dust shields at the brakes:
I would highly recommend you to keep those on. Their main reason is actually to function as a splash guard against rain and mud.
Are you sure that it is the heatshields that are ratteling? Normally that's right, but it can also be the rear exhaust tip hangers. Get under your car and moove the exhaust pipes around. You should be able to hear where the noise it is comming from.

I banged on the midpipe assembly and cats shields with a rubber mallet and nothing seems to rattle and the metal gasket is new on the passenger side manifold flange connection. Just wondering if you ever figured it out. I need to fix mine.
