Gauges acting up+surging and bucking? 1986 Mustang GT

I'm not sure if these two things have anything in common but...I have been fighting a rough running car for a while now. I am not getting any codes and it always passes the cylinder balance test. I have only owned the car (86 GT, H/C/I and MAF) about a month and I have only driven it a few times. The last two times that I have driven longer than a mile or two, I've noticed that every few minutes the temp gauge will rise to almost the H and at the same time my fuel and oil pressure gauges will rise too. They will stay there for a second or two and slowly fall to normal. They will then do it all again a few minutes later. I am also getting bucking and surging at part throttle most of the time. What can gauge all of this?

So the temp, oil pressure, and fuel pressure gauges will rise, decrease to normal, then rise again?
Yes, but I can drive around for like thirty minutes before it starts and it may only do it once every thiry minutes after that but yes all of the gauges climb and then drop back to normal (except the amp gauge which stays locked on halfway even with the ignition off and then key out). I even noticed the speedo bouncing around once when I was going like 65 it would bounce up to 85 and then back down. I know there is a voltage regulator in the instrument panel. Does it sound like this is the problem or is it something else?
