I've got a bone stock 91 5 speed Gt that I'm ready to start modifying. I'd like to at least get low 12's at the track, while also retaining streetability. Doesn't need to pass emissions. This is more of a weekend car, not a daily driver, not a track car. Mostly just to showoff for the underage girls at the movie theater:winks. I'm thinking about getting CHP 347 Stroker shortblock and getting aluminum heads. Is that overkill? Obviously, I know I'll need things like exhaust, gears, accessories, blah blah. I know that. Any input is greatly appreciated.

you need a blower an prob a desent set of heads with all the supporting mods an youll be good to go:bigthumbsup

A 347 with aluminum heads (say AFR 185s or 205s) will make enough power to get into the low 12 EASY. The rest of the parts are up to you. You'd have to try really hard to stop an engine like that from making 350 to 370 whp.
