From the center towards the ends is pretty much how all of those things are done.
The '66 shop manual doesn't say much on the subject for either the 6's or 289, just: "Working from the center to the ends, torque the bolts to specifications." Another page gives the torque as 13-18 ft-lbs.
If its a 390 there is a different torque, 12-18 ft-lbs - why bother to mention a difference?
