I just bought a 87 Ford Mustang Gt Convertible and notice that the converter pipe is in need of replacing. I have rebuild older cars before and just left the converter off with no issues but since this car has a o2 sensors will it cause a check engine light if converter is left off and o2 sensors are still connected.

I have had a cat removed from my 89 Stang with a 2.3L The sensor was in front of the cat location. I don't recall having problems with the check engine light. However, if the sensor was to be after the cat it may be a different story. Can't say for sure on that.

no problems with the engine light..some people will gut the cats, others will take them off, the O2 sensors are ahead of the cats so your in the clear

Nope, it won't hurt it. Just make sure the 02s are hooked up and you're fine.
