I am using a t5 transmission and bell housing from an89 mustang. Everything I have read says it will bolt right up with the 289 and stock 3finger clutch. I will be using the cable and 89 fork. I had to buy a throw out bearing to work with the fork. Now I find that the existing 1989 fulcrum is way too tall. How can I make this work with the long clutch? Will buying a shorter fulcrum work? Why has nobody mentioned this issue?

I did this swap behind a '65 with a 200 I6, ended up using the original flywheel and pressure plate, an '88 2.3 I4 disk, a '65 V8 pilot bushing, a '67 I6 throwout bearing, with the original bellhousing, and an adapter plate between the bell and trans. In your case, I'd guess you would use the clutch pressure plate and disk from the '89 also?
