The knock sensor actually listens for detonation or pre-ignition. It reports any of that knocking to EEC, which then pulls out timing, or whatever. The fox era processors didn't have as many parameters as the later ones, but had other advantages instead.
They started putting knock sensors on the OHC mustangs, no 5.0's had them. Which is good because a loud exhaust can be sensed by knock sensors and make the car run bad, or not at all. But they can be tuned out of the computer.
