What should i look for?

So i might be buying my girlfriends uncles 1969 ford mustang fastback
It it gutted and stripped of 2 of the quarter panels and all doors hood and deck lid.
Body seems to be in good shape.
He has all the parts with some extras
All doors and deck lids and quarter panels are there just not attatched.
Has a brand new 351w Clevland Stroked and polished
Edelbrock intake.
1 8" rear end
1 9" rear end not attached
C4 Transmission
Power steering setup
All engine and tranmission and gauges and dash and interior are out of the car
What are some things i should look for?
What are some of the inherent problems i could face putting it all back together?
Any idea on how much i could expect to pay?
Is it worth it?

There is a little surface rust covering the entire chassis but it all seems to be surface rust.
he is saying about $4500 for the entire thing
Engine tranny all body just not attached
How hard will it be for me to build?
I do not know too much about cars But my girlfriends dad said he can build the engine and tranny assembly and install it but what about the doors and quater pannels and gauges and dash?
Could i do that all by myself?
Any suspension problems i should look for?

Also can anyone explain what a 351 clevland is in terms of engines. good / bad? What makes it different from a 351 Windsor?

the 351 C is stroked to just over 360
What kind of horspower is that with the edelbrock intake??
Im buying it for sure because he isnt in a hurry to sell it and is only selling to me because im like family.
I don't want an auto tranny but im thinking of hooking up a T5 transmission to it. would that fit well or no?
And what kind of horsepower?

It is a 351 cleveland stroked to a little over 360
The C4 and 8 " rear end are stock and i planned on putting in the 9 " anyways
Im just wondering about the whole quaterpanels and stuff like that includind doors.... could i just bolt that stuff on myself?
The rear quarter panels are there but the front ones are the ones i need help on.
