Not modified engine '11 3.7L, when running on the track engine coolant temperature stays constant 230F. Since it is stable I am not too worried, but how high is it? How bad is this for the engine?

PS: it was a hot day, Intake Air Temp shows 105F.
 
Make sure you’ve got fresh synthetic oil in it.

. Any reasons for 10w30 in particular? I know for Coyotes and Voodoo Ford recommends 5w50 for racing, so I was thinking about that one...
5w20 is low viscosity to begin with in normal driving and recommended by Ford. Add racing to the mix, things get hotter and the 5w20 may not provide all the protection you'd want/need. I've been running Full Synthetic. 10w30 for 10 years in my 4.6L SC engine and once heated up oil pressures and temps are optimum for what I do. Even on very hot days at the course, temp & pressure stays where it needs to. For everyday, normal driving, 5w20 is Ford recommended.

I use 5w-50 FS myself since new. It’s what Ford recommends for Track Pack cars (which I have).
